Mix the flour, salt, sugar, baking powder, milk, and vanilla in a large bowl. Stir until the mixture forms a batter. Spread the batter into a prepared slow cooker. Pour the pineapple chunks on top and cook on high for 2 hours. In the last 30 minutes, top with brown sugar. Serve with ice cream if desired.
